4 soft tortillas (corn or flour)

½ cup red peppers

½ cup green peppers

1 cup tomato

1 cup onion

1 avocado

1 cup GO VEGGIE Lactose Free Cheddar Shreds

½ cup salsa

2 tbs. olive oil

1 slice lime


Cut onion, tomato, peppers into bite size pieces

Heat 2 tbs. olive oil in medium sized skillet and add onion, tomato and peppers. Cook until vegetables are softened (about 5-10 minutes)

Add veggies to tortilla, top with GO VEGGIE shreds

Cut avocado into slices and top taco with a few slices per tortilla

Serve with a side of salsa and lime to garnish.
