Having a vegan, vegetarian, or gluten free diet gets rough around the holidays, especially when it is time to entertain or share meals with people with less restricted meal options. However, we know there are enough reasons to pull your hair out around the holidays, and we shouldn’t let meal planning be one of them!
For those of us who don’t wish to partake in the standard vegan meal options, our potato stacks are a wonderful, super easy way to make side dish. Whether you need a simple appetizer to prepare at home for your family or an hor d’oeuvre for your next gathering, our vegan three potato stacks are sure to be a hit.
Rather than rely on just one type of potato, we chose to utilize three different varieties for a full palette of flavor. By using thinly sliced Yukon Gold, sweet, and purple potatoes we also create a more visually appealing appetizer. As we all know, we eat with our eyes first! So having a dish that looks as good as it tastes is a must if you’re attending a potluck or trying to get you skeptical friends / relatives to try a vegan recipe.
The secret to the creaminess and flavor of these potato stacks is GO VEGGIE vegan Mozzarella Shreds and Cream Cheese Alternative. After putting everything in our muffin tins and slipping these into the oven, most people can’t tell the difference between our cheesy three potato stacks and “the real thing”. The only thing they'll "miss" is the cholesterol, lactose and gluten! And with less saturated fat than their dairy counterparts, these cheesy appetizers are definitely a win for us... And for the hearts and stomachs of those we prepare them for later this month.
